I am a fan of easy and healthy recipes. Here are some of my favorites.
Wilted Kale and Miracle noodle
1 packet of miracle noodles
1-½ cups of organic Tuscan kale (or any version you like)
Coconut oil spray
1 clove or garlic finely chopped
1/4-cup parsley finely chopped
Sea salt to touch
- Wash and dry noodles as directed on the package (leave aside)
- Sauté garlic.
- Add kale, cook enough to allow it to wilt.
- Add noodles
- Add parsley
- Add salt to taste.
Top with a serving of simply grilled organic chicken or a piece of your favorite protein and enjoy!
Tomato basil salad:
-2 Pints of cherry tomatoes
-5 sprigs of fresh juicey basil
- ¼ red onion
-salt to taste
- ¼ cup organic olive oil
- Cut tomatoes into 4ths
- Chop up basil
- Chop onions finely
- Add olive oil and salt (to taste)
Place in serving bowl and enjoy.
